CHEFS DISH: Lesley Draper talks to chef Jamie Whiteley

Jamie Whiteley cooks in the most impressive building in Sheffield – but he nearly ended up toiling over bunsen burners instead.

The head chef at Cutlers’ Hall planned to be a chemist but found that food had more of an appeal.

I was originally planning to be a chemist but working in kitchens lit my fire; I enjoyed the buzz and worked my way up learning on the job in good hotels and restaurants, said Jamie, who previously worked at The Old Vicarage, Ridgeway, and the Case Hotel in Chesterfield.

He added: The Cutlers Hall is thousands of square feet steeped in the history of this region. It is the most impressive building in Sheffield once you get through those stainless steel doors it is a treasure trove of our heritage.

Head chefs at Cutlers Hall need to be able to adapt as it serves up fine dinners for all manner of functions, from weddings to corporate days, small bespoke dinners, as well as the famous Company feasts that have been running annually. This year is the 380th event.

That’s not to say that every day goes as smoothly as you’d hope in such a grand venture…

There were once 250 people booked in for dinner when gas to the kitchen was lost just hours before, and the menu had to be completely scrapped.

Jamie said: “We talked to the dinner organizers adapted the menu and the dinner went on as planned. This may sound relatively easy but my life was essentially turned upside down. In the first instance, it was a nightmare but I really enjoyed turning it round finding a suitable menu to cook on the few electric appliances I had available and then putting the whole thing together in very short order. “I wouldn’t want to do it every day but challenges like that add spice to life.”

When it comes to eating rather than cooking Jamie tends towards seasonal and local dishes, favouring stews and pies in winter, then lighter dishes in the warmer months.

 

World Class Speakers Inspire City Conference Ambassadors

Sheffield’s growing reputation as a popular destination for business tourism was celebrated at a high profile event in the city last week.

Held at the prestigious Cutlers Hall, the Sheffield Conference Ambassador Dinner is annual event which celebrates the conference advocates who help bring large scale business events to the city.

An independent research survey has shown that conference delegates accounted for an estimated direct spend of £132.6m in 2014, up significantly on the previous year.

The report also highlighted Sheffield’s success in attracting association conferences accounting for 29% of business in Sheffield, again up on 2013 and significantly higher than the national average of 18% in the rest of the UK.

The Conference Ambassador Programme run by Destination Marketing agency Marketing Sheffield, is one of a number of long term initiatives specifically focused towards increasing business tourism. Conference Ambassadors have brought a variety of events to Sheffield over the past five years, from specialist medical symposiums and workshops to large scale association conventions.
Director of Research & Innovation at Sheffield Children’s Hospital NHS Foundation Trust and Honorary Professor of Child Health & Consultant in Paediatric Endocrinology, Professor Paul Dimitri was a speaker at the event. As a Sheffield Conference Ambassador himself he is bringing hundreds of delegates to the city for the British Society for Paediatric Endocrinology and Diabetes (BSPED) Annual Meeting this week, 25-27 November.

Headline speaker, the presenter and broadcaster Professor Mark Miodownik gave a fascinating insight into what Sheffield would be like in 2050 and the contribution needed from thought leaders and academics in medicine, advanced engineering and manufacturing, sport and wellbeing.

Director of Marketing Sheffield, Brendan Moffett said Sheffield is a very strong city for Business Tourism as evidenced by the strong year on year growth. The Conference Ambassador Programme is a significant contributor and we are keen to accelerate its growth as our Universities go from strength to strength.

The event was supported by Hospitality Sheffield, the University of Sheffield and Sheffield Hallam University.

Craig McKay installed as Sheffield’s 377th Master Cutler

A Sheffield tradition which has run for nearly 400 years is to be maintained with a ceremony to install the Master Cutler.

Craig McKay will become the 377th Master Cutler at Cutler’s Hall later, followed by a service at the cathedral.

The city has a long-held reputation for metallurgy and steel-making, with the Cutlers’ Company founded in 1624.

The Master Cutler now represents the city’s wider manufacturing and technology interests.

At 45, Mr McKay is CEO of Sheffield engineering firm Evenort Ltd and one of the youngest ever Master Cutlers.

He will succeed David Grey MBE as Master Cutler, having been Senior Warden at the Cutlers’ Company for the past year.

Canada trade mission

“What we do has to be relevant to the business context in which we now work, but with an eye to the traditions and heritage which are an essential part of the Company,” Mr McKay said.

“I see our education programme as something we will continue to develop and this year, for the first time, we will be leading a Trade Mission in conjunction with the South Yorkshire International Trade Centre.

“We have chosen Alberta, Canada. It has vast natural resources [which] we have the skills and expertise to utilise.

“It is a perfect match and I have high hopes that it will bring work to the Sheffield City Region.”

The city’s first Master Cutler was Robert Sorby in 1624. Engineer Pam Liversidge became the first female Master Cutler in 2011.

A Cutlers’ Company spokesperson said the body was formed in 1624 “to protect the city’s craftsmen and their craft, ensuring marks were registered, apprentices engaged, blades correctly made and the rules of business adhered to”.

Cutlers’ Hall exhibiting at the I DO Wedding Exhibition

The Cutlers’ Hall sales team will be exhibiting at the I Do Wedding Exhibition on the 6th September 2015. This is the first time the venue has attended the exhibition since catering was moved back in house in February this year.

The exhibition is a great opportunity for the venue to re-establish its offer within the wedding market in Sheffield and the surrounding area. The sales team Chloe and James will be on stand 82 ready to answer any questions perspective brides and grooms may have.

Cutlers’ Hall has a selection of lavish spaces that can host anything from a small intimate wedding in the Drawing and Reception Room right through to a celebration for over 100 guests in the luxurious Main Hall.

The impressive mix of unique spaces, mouth-watering menus and first class service ensure guests at the venue a day to remember!

Open Day at The Cutlers’ Hall

THE treasures of the Cutlers’ Hall will on display for all to see on Saturday, September 12, 2015, as the Cutlers’ Company opens its famous stainless steel doors for its annual open day.

Entrance is free as are the guided tours. Those who prefer can explore the Hall using a self-guide leaflet. The permanent exhibits and collections of silver, paintings and cutlery will be on display as will the private rooms and the public halls.

Light refreshments will be available and a video on the history of the Hall will run throughout the day.

The doors open at 10am with the final tour at 2.30pm prior to the 4pm close.

The Master Cutler, David Grey, said: We are delighted to be opening our doors once again to the general public. Our Open Days have proved very popular with hundreds of people coming to the Hall to enjoy what is part of their heritage.

Among many wonderful items, the Hall houses Harry Brearley’s first stainless steel knives, the magnificent 74-bladed Norfolk Knife for the Great Exhibition of 1851and a piece of silver assayed in Sheffield for every year since the Assay Office opened in 1773. It also contains some items with interesting stories attached including panelling and electroliers similar to those on the Titanic as they came off her sister ship the RMS Olympic as well as a large polished turtle shell – all that remains of the turtle who bit the chef on its way to the cooking pot!

The Hall is a private building owned by the Company of Cutlers and is maintained without public money.

Such is the importance of this occasion to the Company that the some Members of the Company and the Archivist will be on hand to answer questions.

The Cutlers’ Hall hospitality team will also be available throughout the day to discuss any upcoming events and conduct show rounds of the magnificent event spaces we have to offer.
